This autumn, the hotel will take part in Food For Change festival to demonstrate its commitment to sustainability while also proudly showcasing Dorset’s best produce.
In partnership with Relais & Châteaux and Slow Food, the Food For Change festival champions both sustainability and exquisite local Dorset produce. With a view to combating climate change and protecting the biodiversity of animals and plants, the culinary event is the ultimate occasion to savour exceptional dishes, harvested and prepared with ecologically sound principles. Taking place between 4th – 7th October 2018, Food For Change promises an autumnal gastronomic extravaganza.
Exclusively for Food For Change, Summer Lodge’s Executive Chef Steven Titman has created an extraordinary, seven-course tasting menu. It showcases his approach to seasonal, slow food and the finest regional ingredients, many of which are hand-plucked from Summer Lodge’s kitchen garden or carefully sourced from the best local suppliers.
Steven’s imaginative menu truly celebrates the best of the West Country, from Dorset wasabi to locally-caught, hand-dived scallops. Highlights include a rich, creamy Dorset Blue Vinny mille feuille with fig compote, and cured and torched Lyme Bay mackerel with Dorset wasabi aïoli and pickled cucumber. Dessert is a clever reinterpretation of a Dorset classic: Dorset apple cake, in the form of a caramelised apple terrine, which is served with blackberry crémeux and apple sorbet.
Summer Lodge’s irresistible Food For Change menu is part of Red Carnation Hotels’ wider commitment to sustainability and ethical practices that include supporting local charities, conservation, preservation, nature, heritage and green initiatives.
In addition to the Food for Change festival menu, Dorset’s culinary scene continues to thrive this October with Dorset Food Fortnight being celebrated from 15th – 30th October. Alongside Wimborne Food Festival, Feast Weymouth and Screen Bites festival, the two-week gastro fiesta is the perfect opportunity explore the county’s sumptuous produce, whether it’a Chalke Valley Cheese or a traditional Dorset Apple Cake.
Summer Lodge’s Food For Change Festival Menu is available from 22nd September – 30th October 2018, £80 for six courses, £170 with six sommelier-chosen matching wines.
